Kerzner International is hiring a Supervisor, Food Hygiene & Sustainability to safeguard our guests and environment. In this role, you will ensure our luxury resort meets the highest global food hygiene standards and lead the development of our environmental policies. You will be responsible for maintaining a culture of safety, compliance, and sustainability across all food and beverage operations.
What You'll Do
- Enforce food safety programs, sanitation protocols, and personnel hygiene policies.
- Develop, recommend, and monitor corrective and preventive actions based on statistical quality data.
- Prepare reports on food quality and hygiene activities and communicate findings from audits.
- Verify and maintain Food Handler certificates and ensure all F&B staff have adequate food safety knowledge.
- Organize and conduct food safety meetings and training sessions, ensuring understanding and implementation.
- Perform routine safety surveillance and checks of kitchens, bars, and buffet temperatures.
- Carry out and assist with preparation for all food safety and EarthCheck audits.
- Audit and support effective pest control and waste disposal systems.
- Develop, apply, and monitor environmental programs and policies, promoting awareness.
- Review environmental audits, identify areas for improvement, and track related budgets.
- Ensure compliance with HACCP, the Food Act 2024, and all relevant legislation.
- Formulate and maintain quality assurance policies, procedures, and methodology manuals.
- Contribute to sourcing new suppliers and evaluate their production hygiene.
- Manage food complaints effectively and coordinate with engineering on maintenance.
What We're Looking For
- A Bachelor of Science (BSc) in Food Science Technology.
- Minimum two to three years of experience as a Hygiene Coordinator or Officer in a hotel.
- Comprehensive knowledge of HACCP, GMP, kitchen hygiene, and occupational health and safety standards.
- Excellent knowledge of Microsoft Office (Word, Excel, PowerPoint) and the EarthCheck platform.
- Strong analytical, time management, and independent work skills with high attention to detail.
- Excellent written and verbal communication skills and the ability to train staff at all levels.
- A responsible self-starter capable of handling multi-faceted projects under pressure.
- A team player who builds effective relationships with hotel staff and suppliers.
- A professional, confidential, and ethical approach with good personal grooming.
- A complete understanding of food safety standards and procedures, and an understanding of sustainability.
