LSG Sky Chefs was looking for a Sous Chef

LSG Group is hiring a Sous Chef to lead culinary operations for airline meal production at our Philadelphia facility. In this role, you will be responsible for preparing high-quality meals according to company standards and production schedules, while overseeing kitchen staff and ensuring adherence to all safety, hygiene, and quality regulations.

What You'll Do

  • Execute and supervise all food production activities, including preparation, cooking, and plating.
  • Assume responsibilities of the Executive Chef when unavailable, including menu presentations to customers.
  • Supervise, coordinate, and control kitchen helpers in food storage, following FIFO principles.
  • Conduct, coordinate, and supervise inventory counts.
  • Monitor material consumption and order required food and equipment daily to meet production plans.
  • Participate in the development of new food products and menus.
  • Maintain catering manuals and conduct updates as necessary.
  • Execute countermeasures in production in response to customer complaints.
  • Support the training of kitchen helpers.
  • Maintain and monitor hygiene, health, safety, and HACCP standards.
  • Conduct quality control checks according to HACCP regulations.
  • Perform quality checks on received goods.
  • Monitor and ensure compliance with recipe specifications.
  • Ensure your area of responsibility is properly organized, staffed, and directed.
  • Guide, motivate, and develop subordinate employees within HR policy.
  • Implement and embody company values and management principles.
  • Implement and control the cost budget, initiating corrective actions for deviations.
  • Participate in company-sponsored initiatives like Global Quality Standard (GQS), HACCP, and Lean Manufacturing.

What We're Looking For

  • Three to five years of experience in commercial cooking, or an apprenticeship, or certification from a culinary school.
  • Knowledge of food and hygiene regulations, specifically HACCP.
  • Understanding of financial controls (e.g., maintaining food cost budgets, controlling stock levels, minimizing waste).
  • Good communication and organizational skills.
  • Service orientation.
  • Leadership skills.
  • Good knowledge of Microsoft Office and Windows-based computer applications.
