Join Dexterra Group as a bilingual Chef Cuisinier de Soutien opérationnel (Terrain). In this role, you will be pivotal in supporting our on-site culinary operations, dedicating approximately 80% of your time to field work. You will ensure the efficiency, quality, and profitability of food services for our Remote and Hospitality Services business units. This is a safety-sensitive position requiring pre-employment and pre-access drug and alcohol screening.
What You'll Do
- Maintain food product quality and ensure consistent meal delivery standards.
- Participate in recruitment, conduct interviews, and onboard new culinary staff.
- Provide training, coaching, and mentorship to kitchen employees, including approving Red Seal apprentices.
- Write recipes, calculate their costs, and align food production with client schedules.
- Maintain food costs within budget, ensuring accurate inventory control and timely grocery orders.
- Supervise kitchen staff performance, conduct evaluations, and promote a positive work atmosphere.
- Design and implement weekly menus based on specifications and occupancy rates.
- Order groceries via the dedicated GFS website and calculate associated food costs.
- Plan kitchen employee schedules and assist with administrative tasks like timesheets and reports.
- Ensure compliance with company policies, including PPE use, and complete all required safety documentation.
- Use a variety of cooking methods and commercial kitchen equipment to prepare superior quality dishes.
- Ensure compliance with health, safety, and quality regulations.
What We're Looking For
- Red Seal interprovincial certification or higher.
- Fluency in spoken and written English – bilingual French is required.
- Computer training and experience with Microsoft Office.
- Possession of Food Safe, First Aid, and WHMIS certifications.
- At least 5 years of experience as a chef or sous-chef in hotels, restaurants, and/or camps.
- At least 10 years of experience in the hospitality/restaurant sector.
- Knowledge of computerized accounting programs, strong math skills, and budget analysis capabilities.
Nice to Have
- A college or university degree in culinary arts and business management experience.
- Additional experience in the field of external catering.
