Manhattan Country Club is seeking a skilled Sous Chef to support the Executive Chef in delivering exceptional culinary experiences for our members and guests. You will be instrumental in maintaining our high standards of food quality, sanitation, and service while contributing to a positive, values-driven kitchen environment.
What You'll Do
- Promote, work, and act in a manner consistent with our company values.
- Ensure all company policies, procedures, and training programs are followed and completed.
- Maintain compliance with health, safety, and fire regulations for food preparation and kitchen maintenance.
- Plan, direct, and participate in the preparation of food under the instruction of the Executive Chef.
- Assist with recruiting, interviewing, hiring, evaluating, and disciplining kitchen personnel.
- Maintain appropriate cleaning schedules for kitchen floors, walls, equipment, and storage areas.
- Check the quality of raw and cooked food products to ensure standards are met.
- Monitor and maintain proper food holding and refrigeration temperature control points.
- Check in stock orders delivered by vendors and assist with inventory management.
- Instruct cooks and other workers in food preparation, cooking, garnishing, and presentation.
- Work with the Executive Chef to plan and price menu items, establish portion sizes, and prepare standard recipe cards.
- Supervise and coordinate the activities of cooks and kitchen staff.
- Ensure all food is consistently prepared and served according to established recipes, portioning, and serving standards.
- Schedule personnel based on anticipated business activity while meeting labor cost objectives.
- Inspect supplies, equipment, and work areas to ensure conformance to standards.
- Collaborate on food presentation and create decorative food displays.
- Assist in planning, budgeting, and purchasing for all food operations.
- Oversee the continuous training of kitchen employees on equipment, sanitation, safety, and proper techniques.
- Collaborate with other personnel to plan and develop recipes or menus, considering seasonal availability and guest count.
- Demonstrate new cooking techniques or equipment to staff.
- Ensure all equipment is kept clean and in excellent working condition through personal inspection and preventative maintenance programs.
- May meet with guests to discuss menus for special occasions like weddings, parties, or banquets.
- May assist with preparation of required paperwork, including forms, reports, and schedules.
- May assist in directing the set-up and takedown of course events and completing related reports.
- Maintain the confidentiality of company, employee, and member/guest information.
- Demonstrate a commitment to the club's success through positive interactions and meeting quality, service, and safety expectations.
- Attend and actively participate in regularly scheduled staff meetings.
- Perform additional assignments per the direction of management.
What We're Looking For
- At least one year of experience as a chef.
- Certified Food Protection Manager (ServSafe Manager Certification).
- Working knowledge in Food and Beverage operations, specifically in financial controls, staff management, and facilities and equipment management.
- Understanding of safe food handling procedures and responsible alcohol service. Ability to direct and maintain a safe environment.
- Proven culinary knowledge and techniques.
- Ability to negotiate, organize, delegate, and prioritize work under pressure.
- Proficient with MS Word, Excel, Outlook, and POS systems.
- Excellent written and verbal communication skills.
Nice to Have
- An Associate’s degree in culinary arts.
