Role Overview
As Executive Sous Chef, you will work at the heart of a luxury resort nestled along Vietnam’s scenic coastline within Nui Chua National Park. You will support the Executive Chef in managing comprehensive kitchen operations, stepping in when needed, and ensuring seamless execution across all culinary services. This role demands precision, leadership, and a deep commitment to quality in every aspect of food preparation and presentation.
Key Responsibilities
- Support leadership in overseeing daily kitchen functions across multiple outlets
- Train, guide, and supervise kitchen staff to uphold consistent culinary standards
- Ensure all food production meets strict benchmarks for quality, safety, and visual appeal
- Monitor inventory levels, manage stock rotation, and implement waste reduction strategies
- Collaborate on seasonal menu planning, recipe refinement, and cost analysis
- Maintain full compliance with health, hygiene, and HACCP protocols
- Coordinate with service and procurement teams to align kitchen operations with guest needs
- Conduct routine equipment checks and kitchen audits to ensure operational readiness
- Manage team schedules, performance reviews, and personnel development
- Stay informed on culinary trends and apply insights to enhance guest experiences
Qualifications
- Minimum of 2 years in a leadership culinary role within a multi-outlet or luxury hospitality environment
- Specialist expertise in Vietnamese cuisine with a proven track record
- Strong operational knowledge of both kitchen and dining room workflows
- Hands-on management style with a focus on precision and consistency
- Proficiency in Micros and other culinary management software
- Flexible availability to accommodate operational requirements
- Excellent communication and team leadership abilities
- Creative mindset with a passion for refining dishes and processes
- Unwavering attention to detail and dedication to culinary excellence
