The Hyatt Regency Lake Washington is hiring a Lead Cook for our seasonal Dock & Drink Food Truck. This role runs from May 2026 to October 2026 and is responsible for ensuring efficient service and consistent food quality in a high-energy, outdoor kitchen environment.
What You'll Do
- Oversee daily food preparation and service to ensure efficiency during peak hours.
- Maintain consistent food quality, presentation, and adherence to food safety protocols.
- Manage inventory levels, order food and supplies, and control waste.
- Operate independently and efficiently within the small kitchen space of the food truck.
- Run the kitchen, manage ordering, and coordinate service in the Chef’s absence.
- Train and mentor junior cooks and kitchen staff.
- Prepare daily mise en place and ensure stations are ready for service.
- Execute the preparation, cooking, and presentation of dishes according to established standards and recipes.
- Monitor food quality throughout the cooking process and work closely with other staff to maintain workflow.
- Assist in developing and refining menu items.
- Keep your workstation clean, organized, and compliant with all health and safety regulations.
What We're Looking For
- Must be over the age of 18.
- Strong culinary skills and understanding of cooking techniques.
- Ability to read and recreate recipes and perform all basic and intermediate cooking skills, including cooking meat to requested temperatures.
- Ability to operate kitchen equipment safely and work multiple stations.
- Excellent communication, organization, and time-management skills.
- Ability to work quickly while maintaining high standards in a fast-paced setting.
- Flexibility to work weekends and holidays as needed.
- Possession of a valid food handler's card.
- Comfort operating independently and managing the food truck kitchen in the Chef’s absence.
Nice to Have
- At least 4 years of professional experience in a fast-paced line, food truck, casual kitchen, or short-order environment.
- Proven experience in a high-volume restaurant.
- A team-oriented, proactive, and problem-solving attitude.
Team & Environment
This is a lead role in the food truck kitchen where you will mentor junior cooks and ensure smooth daily operations.
