IHG Hotels & Resorts is seeking a Head Chef to lead kitchen operations at our property in Grenada. You will manage food preparation, quality standards, physical maintenance, and inventory control to ensure we meet hotel requirements and manage costs effectively. This role involves adhering to all health, safety, and brand compliance regulations while fostering a positive and inclusive team environment.
What You'll Do
- Manage daily kitchen operations, staff assignments, and communicate clear goals and priorities.
- Recommend and initiate staffing actions, including salary adjustments or disciplinary measures, following company policies.
- Ensure all kitchen staff are properly trained and equipped to perform their job functions effectively.
- Supervise the preparation and presentation of all menu items according to established recipes and standards.
- Assist in planning meals and menus for the restaurant and catered events within brand guidelines.
- Establish procedures and timelines for conducting inventory and determine minimum and maximum stock levels.
- Maintain procedures for the security and proper storage of all food, beverage, inventory, and kitchen equipment.
- Ensure all kitchen equipment is operational, clean, and that kitchen and storage areas are maintained.
- Assist sales, catering, and banquet staff with special events and functions.
- Promote teamwork through daily communication and coordination with other hotel departments.
- Interact with guests to ensure satisfaction, vendors for supply orders, and regulatory agencies for safety inspections.
- Occasionally prepare meals, set up buffets, serve as Manager on Duty, or perform other assigned duties.
What We're Looking For
- Completion of a degree or certificate in culinary arts, or an equivalent combination of education and kitchen operations experience.
- Ability to carry or lift items weighing up to 50 pounds.
- Ability to move about the kitchen, handle food, objects, products, and utensils.
- Ability to bend, stoop, and kneel as required.
- Strong communication skills for interacting with guests, employees, and third parties.
- Reading and writing abilities for completing paperwork, reports, ordering, and following instructions.
- Mathematical skills, including basic math, budgeting, profit/loss concepts, percentages, and variances.
- Problem-solving, reasoning, motivating, organizational, and training abilities.
- Valid alcohol awareness certification and/or food service permit or health/food handler card as required.
- Flexibility to work nights, weekends, and holidays as needed.
Team & Environment
You will supervise a team of kitchen employees in a small to medium full-service hotel. The property has one or two food and beverage outlets and catering/banquet facilities serving fewer than 500 people. You may oversee subordinate supervisors or chefs.
