Responsibilities
- Demonstrate thorough knowledge of kill floor operations, offal and variety by-products processing, feet handling, and adherence to government regulations and internal policies.
- Oversee daily production activities in the kill floor, offal, variety by-products, and feet processing areas.
- Track, analyze, and report daily yield data and equipment downtime metrics.
- Manage team member conduct, performance issues, and workforce retention.
- Maintain effective communication with USDA inspection personnel.
- Ensure departmental objectives are monitored and executed according to set targets.
