Accor Group is hiring an Executive Pastry Chef

Responsibilities

  • Direct and supervise all pastry and bakery functions within the hotel, upholding excellence in quality, consistency, visual appeal, and originality.
  • Design and introduce inventive dessert, pastry, and confectionery creations that align with the premium culinary identity of the property.
  • Partner with executive culinary leadership to craft seasonal menus, event-specific offerings, and tailored guest experiences.
  • Ensure all pastry items meet brand specifications, guest expectations, and food safety standards.
  • Oversee daily pastry kitchen activities, including production scheduling, inventory oversight, cost efficiency, and staffing.
  • Track and optimize food expenditures, labor efficiency, and operational costs without compromising quality or service.
  • Lead, train, and support pastry staff through coaching, performance reviews, and professional development initiatives.
  • Promote a collaborative, inventive work environment that values ongoing learning and culinary innovation.
  • Enforce strict hygiene, sanitation, and safety protocols in compliance with local laws and corporate guidelines.
  • Coordinate with food and beverage, banquets, and events departments to deliver outstanding culinary experiences for weddings, conferences, and VIP occasions.
  • Identify and assess high-quality ingredients, cultivating supplier relationships that support sustainability and excellence.
  • Accommodate guest dietary needs and special requests with precision, personalization, and attention to detail.
  • Stay current with evolving culinary trends, techniques, and market shifts to enhance the pastry program.
  • Contribute to marketing and promotional efforts by designing standout dessert concepts that reflect brand standards.
  • Support departmental and organizational goals by advancing operational efficiency, guest delight, and financial results.

Responsibilities

  • Lead and oversee all pastry and bakery operations across the hotel, ensuring the highest standards of quality, consistency, creativity, and presentation are maintained at all times.
  • Develop innovative pastry, bakery, dessert, and confectionery offerings that reflect the luxury positioning and culinary excellence of Raffles Doha and Fairmont Doha.
  • Collaborate closely with the Executive Chef and culinary leadership team to create seasonal menus, special event offerings, and bespoke guest experiences.
  • Ensure all pastry products are prepared and presented in accordance with brand standards, guest expectations, and food safety regulations.
  • Manage daily operations of the pastry kitchen, including production planning, inventory management, cost control, and resource allocation.
  • Monitor food costs, labor productivity, and operational expenses while maintaining exceptional quality and guest satisfaction.
  • Inspire, mentor, and develop the pastry team through effective leadership, training, coaching, and performance management.
  • Foster a culture of creativity, collaboration, and continuous improvement, encouraging innovation and professional growth within the team.
  • Maintain the highest standards of hygiene, sanitation, and workplace safety, ensuring full compliance with local regulations and company policies.
  • Work closely with Food & Beverage, Banquets, and Events teams to deliver exceptional culinary experiences for conferences, weddings, VIP functions, and special occasions.
  • Source and evaluate premium ingredients and products, building strong relationships with suppliers to support quality and sustainability objectives.
  • Ensure guest preferences, dietary requirements, and special requests are accommodated with care, attention to detail, and personalized service.
  • Stay informed of industry trends, emerging techniques, and market developments to continually enhance the pastry program and guest experience.
  • Support hotel initiatives, promotional activities, and brand campaigns through creative pastry concepts and culinary excellence.
  • Contribute to the achievement of departmental and hotel objectives by driving operational excellence, guest satisfaction, and financial performance.
