Responsibilities
- Supervise daily pastry and bakery functions across all dining outlets, including restaurants, lounges, banquets, in-room service, and retail locations on both sites.
- Create and enforce standardized recipes and plating specifications to maintain consistent quality, cost efficiency, and brand alignment.
- Partner with the Cluster Executive Chef and F&B leadership to integrate pastry programs with the overall culinary strategy.
- Lead creative development of desserts and pastries, blending contemporary trends with the refined identity of luxury brands.
- Enforce strict adherence to health, safety, sanitation, and hygiene regulations in all pastry environments.
- Guide and develop a team of pastry professionals, including chefs, bakers, chocolatiers, and decorators across both properties.
- Assess training requirements and promote a culture focused on skill growth, innovation, and ongoing development.
- Oversee staff scheduling, performance reviews, and long-term talent planning for the pastry department.
- Foster an inclusive, respectful workplace that reflects core organizational values.
- Monitor and manage pastry-related financial performance, including food costs, labor expenses, and productivity metrics.
- Contribute to menu design and cost optimization efforts to enhance profitability without compromising quality.
- Support revenue generation by designing unique pastry offerings for events, weddings, and retail sales.
- Collaborate with procurement teams to secure high-quality ingredients through sustainable and economical sourcing.
- Ensure all pastry presentations embody the elegance, craftsmanship, and narrative depth associated with luxury hospitality.
- Coordinate with marketing and events departments to launch seasonal promotions, special menus, and culinary events.
- Interact with guests when necessary to collect insights and enhance service excellence.
- Perform additional duties as directed by management.
