Responsibilities

  • Supervise assigned kitchen operations to achieve and maintain the highest standards of food quality preparation and guest satisfaction.
  • Monitor food quality and consistency to ensure the food presented to guests meets the highest quality standards.
  • Supervise and monitor kitchen operations, work with yield testing, product identification, and ensure proper rotation and labelling according to written guidelines for food produce specifications.
  • Conduct daily spot checks to monitor all food items being ordered by the kitchen and ensure complete utilization to avoid wastage.
  • Work closely with receiving and storeroom to ensure goods received meet standard quality and hotel specifications.
  • Assess freshness, presentation, and temperature of food served.
  • Ensure food portioning, serving, requisitions, and receiving from stores are properly controlled in line with Standard Operating Procedures to minimize wastage.
  • Update menu recipe costing and menu planning as required, including for F&B promotions.
  • Maintain personal hygiene and grooming according to Raffles Hotel Singapore standards, National Environmental Agency standards, and HACCP guidelines.
  • Enforce the highest standards of cleanliness, hygiene, and sanitation in kitchens, including working areas such as refrigerators, freezers, ceiling, walls, floors, shelving, working tables, and utensils.
  • Ensure all equipment is hygienically stored in its designated area.
  • Ensure all perishable items are stored quickly and efficiently and fully utilized to avoid wastage.
  • Ensure ingredients are fresh and within expiry date, and prevent use of spoiled or contaminated products in food preparation.
  • Ensure colleagues who are ill or suffering from infection are not involved in food preparation or handling.
  • Conduct induction and onboarding of new hires.
  • Ensure colleagues are trained in and comply with hotel’s rules and regulations.
  • Ensure colleagues are trained in and comply with workplace safety and health procedures, hygiene, HACCP standards, and emergency procedures.
  • Oversee effective and professional operations of assigned kitchen.
  • Ensure smooth and effective communication among kitchens and other departments.
  • Manage conduct of subordinates and follow through with employee grievances when necessary.
  • Ensure all deadlines assigned by supervisors are met.
  • Maintain collaborative working relationships with colleagues, supervisors, and managers.
  • Build guest loyalty and develop professional relationships with local guests and regular patrons.
  • Continually improve product by obtaining feedback from guests and patrons.

  • Compliance with HACCP, workplace safety, and health regulations.
  • Effective communication across departments.
  • Management of subordinate conduct and resolution of grievances.
  • Meeting deadlines set by supervisors.
  • Upholding Accor’s core values in all interactions.
  • Following sustainable practices aligned with Accor’s CSR program.
